Banana Pudding Cake

Combine the following using a mixer:

2 cups sugar

3 mashed bananas (make sure they are very ripe)

5 eggs

2 ¾ cup AP flour

1 cup milk

¾ cup oil

2 ¼ tsp baking powder

1 tsp vanilla

 

Divide the batter evenly into three layers and bake at 325 degrees until a toothpick inserted comes out clean.  Set aside to cool.

For the Filling

4 oz cream cheese

½ stick softened butter

1 small box instant vanilla pudding

1 cup milk

8 oz cool whip

1 tsp vanilla bean paste

Using a mixer, cream the butter and cream cheese, then add the vanilla paste, milk and vanilla pudding, mixing well.  Fold in the cool whip.  It should set up in a minute or two to a thickness that is easily spreadable on the layers.  If it is too thick, just add a little more milk.

 

For the Icing

1 stick softened butter

2 cups conf sugar

1 tsp vanilla bean paste

1-2 tbls half and half (depending on texture you are trying to achieve)

This makes enough for a very thin layer over the top; however, you may double this recipe if you prefer a thicker layer of buttercream.
