Blueberry Salad with Blueberry Vinaigrette

Salads can become boring at times, so we love to change them up a bit and add new flavors as well as incorporate more color in each and every single bite.


Amounts are not provided for the salad because we just toss things together until we "feel" it is right deep down inside our little southern hearts! We encourage you to do the can't hurt to have too many veggies!


Crisp, romaine lettuce - shredded

Fresh blueberries

Diced red onions

Toasted Pecans

Diced tomatoes

Diced cucumbers

Diced carrots

Blue Cheese crumbles

For the Vinaigrette:

1 cup fresh blueberries

1/3 cup red wine vinegar

1/3 cup honey

1 tablespoon fresh lemon juice

2/3 cup olive oil

2 tablespoons splenda (or other non-bitter sweetener)

pinch of salt and pepper

Place all vinaigrette ingredients inside a blender and pulse until it is blended well.

Drizzle over the salad and enjoy!

Note:  If the consistency of the vinaigrette becomes too thick, just thin it out with a little water or orange juice by adding one tablespoon at a time and stir.
