Granola with Molasses & Maple Syrup

In our opinion, there is absolutely no comparison between homemade granola and store-bought granola.  Homemade granola tastes so much better, it is super easy to make and it smells heavenly when it is baking in the oven!  You can also control the amount of added sugars and fats when it is baked at home.

For this recipe, I have used molasses and maple syrup as the sweeteners of choice; however, I have also made it using a bit of Splenda in order to reduce the amount of syrup/molasses in the mixture.  I have also used honey to sweeten it.  The choice is yours on this.  I love molasses; however, if you prefer maple syrup or honey instead, just replace the molasses with the same amount of maple syrup or honey.  It is just that easy!

I am also using coconut oil in this recipe; however, there are many arguments about whether the oil is necessary.  I use it because I used it in my very first batch of homemade granola, the end result was excellent and I don't want to mess up a good thing!  If you wish to try it without the oil, have at it and let me know how it turns out! :)

We love to eat this as a breakfast cereal with milk, sprinkled on top of Greek yogurt or simply as a snack right by itself!

This makes a very large batch (two extra large sheet pans), so have something handy to keep it stored in for freshness.  I have found Mason jars are great for this, but I have also kept it inside an airtight plastic container.  It will keep for a while, but I don't really know how long because my family usually finishes this off in a flash!

Ingredients

4 cup whole oats

1 1/2 cups pecan pieces, roughly chopped

1 1/2 cups walnut pieces, roughly chopped

1 cup sunflower seeds

1 cup raisins

1 cup dried cranberries

1 cup coconut flakes

1/2 cup molasses

1/2 cup maple syrup

3 tsp maple extract

2 tsp vanilla extract

3 tsp cinnamon

1 tsp nutmeg

1/2 cup melted coconut oil

Directions

  1. Preheat the oven to 300 degrees.

  2. In a small bowl, combine syrup, molasses, melted oil, extracts, and spices.  Whisk well and set aside.

  3. Combine all other ingredients in a very large bowl.

  4. Add the wet mixture to the granola mixture and stir with a wooden spoon to coat well.

  5. Line two extra large baking sheets with parchment paper.

  6. Spread the mixture onto the two baking sheets.

  7. Bake for 30-40 minutes until it is slightly brown.

  8. Remove from heat and set aside to cool on the pans.

  9. Once the mixture is cool, gently break apart pieces and store in an airtight container.
