Cinnamon Swirl Coffee Cake

This cake smells absolutely amazing when it is baking! 

 

The cake is buttery and golden with a gorgeous swirl of cinnamon in the middle. 

 

No need to save this for breakfast because this beauty is delicious any time of the day!

Don't forget the coffee, hot tea or tall glass of milk to wash it down :)

Ingredients for the cake batter:

½ cup softened butter

½ cup canola or vegetable oil

1 ¼ cups sugar

5 eggs

1 tablespoon vanilla extract

3 cups all purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 ½ cups milk mixed with 1 tablespoon vinegar

 

For the filling:

4 tablespoons butter

1 tablespoon cinnamon

½ cup flour

½ cup brown sugar

 

For the topping:

6 tablespoons butter

¾ cup flour

½ cup brown sugar

1 tablespoon cinnamon

 

  

Directions

  1. Prepare a tube cake pan with shortening and flour to prevent sticking.

  2. Begin with the cake by combining the butter, oil and sugar.  Mix well using a hand mixer.

  3. Add the eggs one at a time and mix well.

  4. Add the vanilla and mix well.

  5. Combine the flour, baking powder and salt and sift well.

  6. Add the flour mixture a little at the time and alternate with the milk/vinegar mixture until all has been combined well.

  7. Set the cake batter aside.

  8. In a small bowl, combine the filling ingredients and use a fork to mix.  The mixture should form small pea size pieces when pressed together with your hands.  Set this aside.

  9. In a food processor, add all the ingredients for the topping and pulse.  This mixture should clump together a bit when completely mixed.  Set aside.

  10. Pour half of the cake batter into the tube cake pan.

  11. Sprinkle the filling mixture evenly over the top.

  12. Pour the remainder of the cake batter over the filling mixture.

  13. Sprinkle the topping mixture evenly over the top.

  14. Bake on 350 degrees for about 40-50 minutes or until a toothpick comes out clean.  Ovens vary in cooking, so check the cake after about 30 minutes just to make sure it does not overcook.

  15. When finished baking, allow the cake to rest inside the pan for about 5 minutes before removing.

  16. This cake is absolutely delicious with coffee or a glass of milk!  Enjoy!
