Homecoming Chicken Casserole

Church homecomings in the south are typically centered around worship, food and fellowship.  Of course, most folks in attendance are anxiously awaiting the food buffet that is available after the service.  

Homecomings at the church I attended when I was growing up was none other than a food extravaganza.  There were dishes and platters full of delicious food that had been prepared by some pretty awesome cooks.  There was always a plethora of fresh vegetables straight from the garden, enough fried chicken to fill the bed of a truck, and a table full of desserts fit for a king!  And who could forget the multitude of casseroles on the table??  No church homecoming is ever complete without a chicken casserole!

This casserole is full of flavor and creamy goodness.  The topping is slightly different from my mama's recipe in that it has a mixture of Ritz crackers and French Fried Onions instead of the typical stuffing mix.  Inside of the casserole is a blend of cheese, mayo and cream of chicken soup.

This is such an easy dish to make and if you don't have time to cook the chicken, just grab a rotisserie chicken from the supermarket and use it instead!  This dish can be assembled ahead of time, stored in the refrigerator and cooked the following day.

Ingredients

2-3 cooked chicken breast, cut into bite size pieces

1 can cream of chicken soup

2/3 cup mayonnaise

1 cup shredded cheddar cheese ( A little more is even better if you like cheese like I do!)

3 - 15 oz cans of mixed vegetables (drain off excess liquid)

4 tablespoons butter divided

1 small onion chopped

1 sleeve Ritz crackers, crushed

1 - 3oz bag of French Fried Onions

Directions

  1. Place the chopped onion and 2 tablespoons of butter in a microwave safe dish.  Cover with plastic wrap and cook on high for 2 minutes.  Remove from the microwave and allow to cool a bit before removing the plastic.  Be careful with this because the steam is very hot!

  2. In a large bowl, combine chicken, soup, veggies, cheese, mayo, onion and butter.  Add a dash of salt and pepper.  Stir to combine well and transfer to a casserole dish that has been sprayed with non-stick cooking spray.

  3. Crush the Ritz crackers and sprinkle on top, followed by the French Fried Onions.  Drizzle 2 tablespoons of melted butter over the top.

  4. Bake on 350 degrees until everything is nice and bubbly and the top is has browned.  If your oven tends to cook fast, you may want to reduce the temperature to 325 and/or cover slightly with foil until the last few minutes of the cooking process.
