McRae's Parfait

This recipe was shared with us by a great friend, Dean McRae.  Dean definitely has some awesome skills in the kitchen and we enjoy sharing recipes!  We are kindred spirits who love to cook and when we develop a new recipe, we like sharing them with others.

The original parfait recipe included cocoa powder, so you can substitute that for the chocolate, if you would like.  If you substitute, I would recommend starting at 1/2 cup of cocoa that has been sifted.  

We are using melted chocolate.  While we use dark chocolate, you can also use milk chocolate or semi-sweet, depending on what you like the best.

Dean serves his with mixed berries and granola and they are delicious.  We have included strawberries and toasted pecans with ours because that is what we had on hand. 

 

 Depending on the occasion, these parfaits can be "dressed up" in martini or wine glasses, or they can be a tasty treat served inside clear plastic cups for a more casual vibe.  The possibilities are endless!

Ingredients

Chocolate

8 oz cream cheese, softened to room temperature

2/3 cup powdered sugar, sifted  (use less sugar if you are using milk chocolate in the place of the dark chocolate)

3 cups heavy whipping cream

10 oz dark chocolate morsels, melted and cooled slightly

Vanilla

8 oz cream cheese, softened to room temperature

1 cup powdered sugar, sifted

3 cups heavy whipping cream

1 tablespoon vanilla extract or vanilla bean paste

 

 

Directions

For the Vanilla cream:

  1. Using a hand mixer, beat the cream cheese until it is smooth.

  2. Add the sugar and mix well until all clumps are removed.

  3. Add the vanilla and heavy cream.

  4. Mix on high until smooth and creamy with slightly stiff peaks.

  5. Remove from the bowl and place inside a large ziplock bag for piping into the dish.

For the Chocolate cream:

  1. Using a hand mixer, beat the cream cheese until smooth.

  2. Add the sugar and mix well until all clumps are removed.

  3. In a small bowl, microwave the chocolate morsels until they are melted.  (about 1-2 minutes.)

  4. Allow them to cool a bit before adding to the cream cheese mixture.  You want them to be melted, but not too hot.

  5. Mix well.  It will appear a bit lumpy, but don't worry.

  6. Add the heavy cream and mix well until it is smooth and creamy with slightly stiff peaks.

  7. Remove from bowl and transfer to a ziplock bag for piping into the serving dishes.

Garnish with berries, granola, nuts, etc..

The vanilla cream would be great served with fresh peaches in the summertime....yum!!
