Meatballs (Low Carb)

Meatballs...YUM!

Meatballs have always been one of our favorite appetizers and we also love them on sub rolls...because who doesn't love a juicy meatball sub?

But what if you are counting carbs?  Regular sub rolls just don't fit the low carb lifestyle, so we have adjusted this recipe especially for those who are trying to count their carbs.

Normally we would include bread crumbs in the mixture, but not for this version!

These are packed with flavor from herbs and spices, sausage and parmesan cheese.  We have baked these in the oven and topped them with a simple marinara sauce and mozzarella cheese.  You won't even miss the bun!

Ingredients

1 pound ground beef

1 pound italian sausage

3 tablespoons fresh parsley chopped

6 cloves garlic minced

4 oz finely grated parmesan cheese

2 eggs

1 teaspoon dried basil

1/8 tsp salt, 1/8 tsp pepper

1/4 cup heavy cream

2 cups mozzarella cheese (for the top)

Directions

  1. Combine all ingredients for the meatballs, reserving mozzarella for the top.

  2. Roll into balls about 1.5 inches in diameter.

  3. Place in an oven safe baking dish.

  4. Bake on 350 degrees until almost done.  The time varies with ovens.  Do not overbake to avoid drying out.

  5. Remove from the oven and add marinara sauce and cheese over the top.

  6. Return to oven and bake until bubbly and cheese has started to brown.

These are even better the reheated next day!
