Pan Fried Squash

Ingredients

4-5 yellow squash

1 large onion, diced

1/2 tsp salt

1/2 tsp pepper

2 tablespoons flour

Olive oil to cover the bottom of a cast iron skillet.

Instructions


  1. Cut the ends off of the squash and slice horizontally.

  2. Remove as many of the seeds as possible. (The seeds can make this a little slimy.)

  3. Cut into bite size pieces and place in a large bowl.

  4. Add the diced onion.

  5. Add the seasonings and flour.

  6. Toss to coat well.

  7. Once the oil is heated, add the squash mixture to the pan.

  8. Cover for about 8-9 minutes and cook over medium heat without disturbing.

  9. Remove the lid.

  10. Gently turn over the squash in small sections.

  11. Continue cooking, checking every 3-4 minutes.

  12. Don't continuously stir this, just flip in sections.

  13. Stirring will make this a slimy mess! :)

  14. Cook until it has reached the desired amount of caramelization.

  15. Remove from heat and serve.
