Red Beans and Rice (Pressure Cooker)

Red Beans

1 pound of red beans

1/3 chopped bell pepper

1 stalk celery, chopped

1/2 large onion, diced

2 tsp New South seasoning blend

1 cube chicken bouillon

1 smoked ham hock

70 oz water (or enough to cover beans and ham hock)


2 cups white rice (Do not add to pressure cooker.)




Place all ingredients (except rice) inside a pressure cooker.

Cook for 40 minutes. 

While the beans are cooking, cook rice according to the directions on the package.


When the pressure has released from the pot, remove about half of the beans and smash them with a fork. Return them to the pot and stir.

You may remove some of the excess broth, if you would like.

We like alot of broth because we typically serve this dish with cornbread on the side.

Serve over rice.
