Steak Hoagies with Giardiniera

When school starts back, I am always looking for recipes that incorporate the use of a slow cooker.  I just toss everything into the crock pot and cook while I am working.  My family absolutely loves these steak hoagies, especially when I include Giardiniera.

 

This steak sandwich is so easy to make!  Don't let the Giardiniera scare you away!  It is just an Italian relish of pickled vegetables in vinegar or oil and it takes an ordinary sandwich over the top!

The steak is simply slow cooked in a crock pot.  What could be easier than that?  The Giardiniera is made ahead of time and used as a condiment on the sandwich.  Don't skip this part!  It really makes this sandwich super delicious!  The au jus made when the steak cooks is absolutely divine to use as a dipping sauce!

Ingredients

For the steak mixture:

1.5 - 2 pounds thinly sliced eye of round beef steak (Any thin strip steak should work and it does not have to an expensive cut of meat!)

2 cubes Knorr beef bouillon 

dash of pepper

1 diced onion

1 diced sweet green pepper

Water to cover the steak

For the Giardiniera

3 stalks celery chopped finely

1 onion chopped

1/4 cup chopped banana peppers

1/4 cup chopped olives

1 tsp garlic powder

1 1/2 tsp salt

1/4 tsp crushed red pepper flakes

1/2 cup sugar

1 cup vinegar

Directions

For the Giardiniera

Bring liquid and seasonings to a boil with the sugar.  Pour over the veggies.  This can be eaten right way; however, the flavors develop more if it is allowed to refrigerate for a few hours or even a day before using.

For the Steak

Place all ingredients in a crock pot and cover with water.  Cook on low for 6-7 hours.

Serve on top of hoagie rolls.
