Stuffed Poblano Peppers

This is a twist on jalapeno poppers but it serves as a meal instead of an appetizer.

The peppers are stuffed with cream cheese and ground beef seasoned with taco seasoning, then topped with shredded cheese.

These are super easy and delicious all by themselves, but they are also great served with pico de gallo, sour cream and guacamole!

Of course, there is always room for a side of Mexican rice and beans!

Ingredients

4 poblano peppers, cut in half, remove seeds and veins and wash your hands thoroughly after doing so!

1 lb ground beef, browned

1 package taco seasoning

8 oz sharp cheddar or Monterey Jack cheese

8 oz cream cheese

Directions

  1. Make sure the meat has been drained of grease after browning.

  2. Follow the directions on the taco seasoning to make the filling.

  3. Cut the cream cheese into 8 slices and place one slice inside each half of pepper.

  4. Top the cream cheese with some of the seasoned ground beef.

  5. Sprinkle cheese on top.

  6. Bake at 350 degrees until the cheese has melted and slightly brown.
