Summer Tomato and Cucumber Salad

This salad brings back so many memories of my childhood when we picked fresh tomatoes from our garden!

My mama would make this salad and I could eat every last bite of it!  It is great as a side dish with almost any meal.  If you don't think you can eat an entire recipe at once, no worries!  This will keep in the refrigerator for several days.

Ingredients

4-5 tomatoes, peeled and cut into bite size chunks

1 large cucumber, peeled and sliced

1/2 red onion, thinly sliced

1/2 cup white vinegar

1/2 cup vegetable oil

1/4 cup splenda

1/2 tsp salt

1/2 tsp pepper

1 & 1/2 tsp Italian seasoning

1 tsp fresh parsley, chopped

Instructions

Place the tomatoes, cucumbers and onion in a large bowl.  Set aside.

In a separate bowl, combine all other ingredients and use a whisk to stir.

Pour mixture over the veggies and toss gently.

Cover and refrigerate for at least one hour before serving.
