Three Bean Chili
This THREE BEAN CHILI is full of veggies and protein! It is a great go-to meal for busy weeknights when you are running in a million different directions.
Just brown the meat and saute the veggies beforehand and throw everything in a crock pot!
Ingredients
2 lbs ground beef
(may substitute with ground chicken, turkey or pork)
1 red onion chopped
1 green pepper chopped
5 cloves garlic chopped
2 carrots thinly sliced
2 stalks of celery thinly sliced
2 tablespoons olive oil
2 – 14 oz cans dark red kidney beans drained
1 – 14 oz can black eyed peas
1 – 14 oz can navy beans
2 – 14 oz cans white corn drained
1 – 28 oz can diced tomatoes
32 oz beef broth
2 packages taco seasoning
1 package dry ranch dressing
1 tsp chili powder
1 small can tomato paste
1 tsp cumin
32 oz tomato juice

Saute’ the fresh vegetables in the olive oil until the onions become a bit translucent.

Add the ground beef and cook until the meat is browned.

Add the tomato paste, seasoning packets, dry ranch dressing, chili powder, and cumin.

Give this a good stir, then add the beans, tomatoes, tomato juice and beef broth.

Allow this to simmer for at least 30 minutes, stirring frequently. This may also be cooked in a crock pot for 5-6 hours on low.

Salt to taste.

Serve with cornbread, tortilla chips or saltines.
