Three Bean Chili

This THREE BEAN CHILI is full of veggies and protein!  It is a great go-to meal for busy weeknights when you are running in a million different directions. 

 

Just brown the meat and saute the veggies beforehand and throw everything in a crock pot!

 

Ingredients

2 lbs ground beef

(may substitute with ground chicken, turkey or pork)

1 red onion chopped

1 green pepper chopped

5 cloves garlic chopped

2 carrots thinly sliced

2 stalks of celery thinly sliced

2 tablespoons olive oil

2 – 14 oz cans dark red kidney beans drained

1 – 14 oz can black eyed peas

1 – 14 oz can navy beans

2 – 14 oz cans white corn drained

1 – 28 oz can diced tomatoes

32 oz beef broth

2 packages taco seasoning

1 package dry ranch dressing

1 tsp chili powder

1 small can tomato paste

1 tsp cumin

32 oz tomato juice

  1. Saute’ the fresh vegetables in the olive oil until the onions become a bit translucent.

  2. Add the ground beef and cook until the meat is browned.

  3. Add the tomato paste, seasoning packets, dry ranch dressing, chili powder, and cumin.

  4. Give this a good stir, then add the beans, tomatoes, tomato juice and beef broth.

  5. Allow this to simmer for at least 30 minutes, stirring frequently.  This may also be cooked in a crock pot for 5-6 hours on low.

  6. Salt to taste. 

  7. Serve with cornbread, tortilla chips or saltines.
